Potato Dishes
Vegan Potato Dauphinoise Gratin

Ingredients
500g Potatoes
1 Red Onion
6 Cloves of Garlic
2 tbsp Nutritional Yeast
1 can Coconut Milk 
6 tbsp Olive Oil
Salt and Pepper
Vegan/Normal Parmesan
 
Method
1) Preheat the oven to 200 C
2) Slice potatoes using a mandolin or thinly with a knife
3) Place potato slithers in a circle until the centre is reached (see video
4) Crush the garlic and chop the onion before placing in a bowl along with the coconut milk, salt, pepper and nutritional yeast
5) Whisk mix together and pour over the potatoes, season with more salt
6) Bake for 45 minutes
7) Serve with parmesan, olive oil and extra salt
