Soup 
Coconut and Sweetcorn Soup with Maple Pumpkin Seeds

Ingredients
1 Onion
1 tbsp Olive Oil 
2 Garlic Cloves
1 tbsp Grated Ginger
200g Sweetcorn 
1 Can Coconut Milk
500ml Stock/Broth 
 
Method
1) Dice the onion and place in a pan with oil, bring to a medium
heat and cook for 5 minutes until golden
2) Crush the garlic, grate the ginger and cube the potatoes
before then adding to the pan, along with the corn, broth,
coconut milk
3) Simmer for 30 minutes
4) While simmering place the pumpkin seeds in a pan with the maple syrup and cook for 5 minutes. Put to one side and leave to cool and crystalise
5) Blend to soup place in a bowl and sprinkle with pumpkin seeds and seasoning.
