THP Recipe: Simple Lemon, Herb & Olive Oil Dressing

This is a quick, easy and delicious dressing that can be drizzled over salad, cooked vegetables, meat, fish and/or mixed into cooked beans.


As a nutritionist I am always looking for ways to get lemons, herbs and olive oil into my clients. These foods are packed full of health supportive nutrients, including vitamin C, antioxidants and healthy fats.


You can mix the recipe up to suit your taste once you have got the hang of it. For example, you could add in fresh garlic, seasonal herbs or mustard.

Ingredients


6 tbsp Extra Virgin Olive Oil

1 tsp Honey (Runny) or Maple Syrup

Juice of 1 Medium Lemon (Fresh)

1 tbsp Fresh Herbs or 1 tsp Dried Herbs (e.g. Basil, Thyme, Rosemary, Oregano)

1 Pinch of Salt (see notes)

1 Pinch of Pepper


Optional* - 1 tsp Lemon Zest (Finely Grated, Unwaxed Lemons - See Notes)

Optional* - 1/2 Garlic Clove (Finely Chopped or Crushed)

Method


  1. Add all of your ingredients into a clear screw/clip topped glass jar or alternatively make the dressing in a glass jug and pour it into a bottle.

  2. Add the lid and shake until everything is mixed together.

  3. Serve (see notes)

Notes


  • When choosing your salt, avoid table salt due to its low mineral content and instead opt for something like sea salt.

  • If you do not have a fine grater just add the lemon juice.

  • Always look for unwaxed lemons when using the zest.

  • This dressing will contains the highest nutrient levels when used immediately, however, it can be stored in the fridge for up to 3 days.

  • Shake thoroughly before serving.
