Turmeric roasted vegetables recipe
Ingredients
1 medium carrot, chopped
½ small cauliflower, cut into florets
1 medium sweet potato, cubed
1½ tbsp olive oil
½ tsp turmeric powder
½ tsp ground cumin
1 garlic clove, minced
Pinch of salt and black pepper

Method
Preheat oven to 200°C (180°C fan).
Toss all vegetables with oil, turmeric, cumin, garlic, salt, and pepper.
Spread on a baking tray and roast for 30–35 minutes, stirring halfway through.
Notes
Add courgettes, red onion, or beetroot.
Sprinkle with chopped fresh coriander before serving.
