Turmeric roasted vegetables recipe


Ingredients


  • 1 medium carrot, chopped

  • ½ small cauliflower, cut into florets

  • 1 medium sweet potato, cubed

  • 1½ tbsp olive oil

  • ½ tsp turmeric powder

  • ½ tsp ground cumin

  • 1 garlic clove, minced

  • Pinch of salt and black pepper

Method


  1. Preheat oven to 200°C (180°C fan).

  2. Toss all vegetables with oil, turmeric, cumin, garlic, salt, and pepper.

  3. Spread on a baking tray and roast for 30–35 minutes, stirring halfway through.



Notes


  • Add courgettes, red onion, or beetroot.

  • Sprinkle with chopped fresh coriander before serving.
