Creamy turmeric pumpkin soup recipe


Ingredients


  • 1 tbsp coconut or olive oil

  • 1 medium onion, chopped

  • 1 garlic clove, chopped

  • 1 thumb-sized piece ginger, peeled and  chopped

  • 250 g pumpkin or butternut squash

  • 1 red pepper, chopped

  • 1 tsp turmeric

  • ½ tsp ground coriander

  • ¼ tsp cinnamon

  • 200 ml coconut milk

  • 350 ml vegetable stock or bone broth

  • Juice of ¼ lime

  • Salt and pepper to taste

  • Chopped fresh coriander, to garnish

  • 1 tbsp live organic natural yoghurt (optional)

Method


  1. Heat oil in a pot, sauté onion, garlic, and ginger for 3–4 minutes. Remember not to let them burn.

  2. Add vegetables and spices; stir whilst sautéing for 2–3 minutes.

  3. Add coconut milk and stock; leave this to simmer with a lid on for 20 minutes until soft.

  4. Blend until smooth, stir in lime juice, season, and serve with yoghurt and coriander garnish.



Notes


  • Add chilli flakes for added heat.

  • Add carrot and/or sweet potato for extra nutrition.

  • Sprinkle with ‘Spicy Turmeric Nut & Seed Topper’ for added crunch & flavour

  • This soup freezes well so double or triple the recipe to batch cook for the freezer.
